The fruit comes from Donnybrook and after hand picking it was whole bunch pressed into puncheons with a mix of 25% new and then wild yeast fermented. Some of the lees were stirred over the 9 months in oak. Opens with an aroma of very subtle butterscotch struck match character but it's restrained and then the palate delivers the richness you expect from the Donnybrook region. It has a fine savouriness about it, and it's got a seamless infusion of oak in support of what is quite concentrated and intensely powerful fruit. And then there is that fine chalky minerality that defines the long palate that it sustains with keen focus.
