Cape Grace has been a champion of this variety for some time. This gets about 30% wild fermentation in oak, which certainly brings added complexity and interest. Has a crunchy apple and fresh pastry character on the nose with a palate that has depth and layered complexity finished with a fine lingering acidity. Great food wine, this.
