Cabernet Sauvignon

Its pale onion-skin, copper hue signals the style. Made from cabernet, it has a subtle leafy note, but savoury, textured fruit defines the palate. A classic Provence-style rosé, it offers surprising depth and flavour, with texture carrying through to a long finish. Terrific drinking while young.

Interesting wine, this. It’s predominantly nebbiolo, so it gives a burst of bright red berry fruit, then gains some textural influence from time on lees. It retains that vibrant red berry character on the palate, adding a nice savouriness to the finish. It’s a complex, well-made rosé that elevates it above the ordinary.

The indelible Nic Peterkin stamp is all over this thoroughly captivating rose style. It’s made from 40-year-old pinot nor and 20% chardonnay from Margaret River. Pressed as whole bunches and then fermented in a combination of French barriques and clay amphora. The chardonnay and pinot were fermented and matured separately until being brought together. Aromas of cranberry and pomegranate with a little cherry and spicy grapefruit. The palate is textured with a fine vibrant acidity.
