In many ways a style that bridges the older style with the modern linear restrained styles. I like it. Let’s get that on the record. Whole bunch pressed and fermented in a mix of 30% new and older oak where it did its thing for nine months. Aromas of lemon zest and butterscotch with a creamy tart character. On the palate rich texture fruit characters emerge with a dry savoury definition extending to a long finish. Crunchy crystalline finish.
