This can be a polarising wine but in this case it is a beauty. Made using demi-muid and ceramic eggs for fermentation and then left for 10 months in these vessels to build texture. One of the most distinctive aromas of any white variety. Dominant lychee, lime and pear with a liberal sprinkle of spices. The palate is textured but retains a lively zing thanks to the bright acidity.
