Wondrous things happen when you leave a sparkling wine for an extended time on lees. In this case, a 100% chardonnay sparkling wine has been turned into a beautiful expression of the style and the variety. It's just starting to show some influence from time on lees with a slightly toasty character emerging, but it’s still driven by considerable primary fruit. Already complex, with a lovely palate feel and a lively finish. An excellent example of West Australian sparkling wine.
